Pecan Pie Bars

Ingredients:
• 1/4 cup butter
• 1/2 cup sugar
• 3 eggs, beaten
• 1 cup dark corn syrup
• 1 teaspoon vanilla extract
• 1 cup pecan halves

Directions:
• In the bowl of a mixer, beat butter and sugar until light and fluffy
• Add eggs, corn syrup and vanilla, mix until well blended.
• Stir in pecans
• Line the bottom of an ungreased sheet pan with pie dough
• Pour the pecan batter on to the dough.
• Bake at 350F for 10 minutes then reduce oven temperature to 325F and bake another 35 minutes.

Pumpkin Pie Bars

Ingredients:
• 2 large eggs
• 15 ounces Libby’s canned pumpkin (1 can)
• 1 cup evaporated milk
• 14 ounces sweetened condensed milk
• 1/2 tsp salt
• 1 tsp cinnamon
• 1/2 tsp ground ginger
• 1/2 tsp ground cloves

Directions
• Preheat oven to 425F.
• Whisk eggs well in a large bowl. Whisk in the pumpkin, both milks, salt, and spices. Mix until everything is completely combined.
• Line the bottom of an ungreased sheet pan with pie dough
• Pour mixture into an unbaked pie crust
• Bake for 15 minutes, then turn the oven down to 350F and bake for another 30-40 minutes, or until set around the edges and a knife inserted near the center comes out clean.
